Equipment

  • Stand Mixer optional- By hand, if needed

Ingredients

  • 1 cup All-Purpose Flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 cup Butter-1 stick Soften
  • 1/3 cup sugar
  • 2/3 cup Brown Sugar Lightly packed
  • 2 tsp Vanilla Extract
  • 1 Egg Room Tempature
  • 1 1/2 cups Rolled Oats 1-Minute Oats
  • 1 cup Chocolate Chips
  • 1/3 cup Raisins *Soaked and Drained
  • Extra chocolate chips to top before baking

Instructions

  • In a bowl, mix flour, salt and baking soda.
  • In stand mixer (with paddle attachment) or by hand, whip butter until smooth. Add sugars and mix for about 1-2 minutes.
  • Add vanilla and egg. Mix until smooth.
  • Add Flour mixture until combined. Stir in oats, chocolate chips and raisins.
  • Refrigerate for 1 hour to rest.
  • After 1 hour, Preheat the oven to 375℉ and top the scooped cookie dough with the remaining chocolate chips.
  • Bake for 10 minutes or until slightly brown, but still moist in the center. This will give the chewy texture we love.
  • Let them rest for 5 minutes and Enjoy!

* Soaking the raisins makes this cookie like no other. Even if you do not like raisins, you will love this cookie because they give a burst of juicy goodness.
