This simple and tangy lime jam is perfect for spreading on toast, stirring into yogurt, or using in drinks and desserts! It’s bright, zesty, and naturally sweet, making it a must-have for citrus lovers.

Ingredients:

Instructions:

  1. Prep the Limes: Wash the limes thoroughly. Zest 3 limes, then juice all 6. Slice the remaining lime peels into very thin strips for extra texture (optional).
  2. Simmer the Base: In a saucepan over medium heat, combine the lime juice, zest, sugar, water, and salt. Stir until the sugar dissolves.
  3. Cook Until Thickened: Bring to a simmer and cook for 25-30 minutes, stirring occasionally. The jam will thicken as it cools.
  4. Test for Doneness: Place a spoonful on a cold plate—if it wrinkles slightly when touched, it’s ready. If not, cook for a few more minutes.
  5. Store & Enjoy: Pour into a clean jar and let cool completely before sealing. Store in the fridge for up to 3 weeks.

Variation:

For a lime marmalade, simply keep more of the peel (finely chopped) and simmer the mixture a little longer until it becomes a thick, jelly-like consistency.
