The March: Honey Lavender Bee's Knees is a sophisticated and elegant cocktail that blends the floral sweetness of honey lavender syrup with the smooth botanical notes of gin and the tartness of fresh lemon juice. This delicate concoction is perfect for a spring afternoon or a sophisticated gathering.

Ingredients:

Instructions:

  1. Make Honey Lavender Syrup:
    • In a small saucepan, combine 1/2 cup honey and 1/4 cup water.
    • Add 1 tablespoon dried lavender flowers.
    • Bring to a simmer over low heat, stirring occasionally.
    • Remove from heat and let steep for 15-20 minutes.
    • Strain through a fine-mesh sieve into a clean jar.
    • Store in the refrigerator for up to 2 weeks.  
  2. Combine Ingredients:
    • Fill a shaker with ice.
    • Add gin, honey lavender syrup, and lemon juice.
    • Shake vigorously for 10-15 seconds until well-chilled.
  3. Serve:
    • Strain into a chilled coupe glass.
    • Garnish with a fresh lavender sprig.
