  1. Activate the Yeast
    Combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until it’s foamy. This step ensures your dough will rise beautifully.
  2. Make the Dough
    Mix the flour and salt in a large bowl. Add the yeast mixture and olive oil, stirring until a dough forms. Knead for 8–10 minutes until the dough is smooth and elastic. Cover and let it rise for about an hour or until doubled in size.
  3. Shape and Rest
    Divide the dough into 8 pieces. Roll each piece into a ball and flatten it into a circle, about ¼-inch thick. Let them rest for 10 minutes.
  4. Bake to Perfection
    Preheat your oven to 475°F with a baking stone or tray inside. Bake each pita for 3–4 minutes until it puffs up. Remove and cover with a towel to keep them soft
